Biko – is a traditional Filipino dessert that has been enjoyed for generations. This sweet and sticky delight is a staple in Filipino cuisine, often served during special occasions, festivals, and family gatherings. To create your own Biko, you'll need the following ingredients: - Glutinous rice - Coconut milk - Brown sugar - Coconut cream - Pandan leaves (optional) - Salt: Balances the sweetness and enhances the overall flavor.

Steps on how to make your own Biko:

Prepare to do it, the sweet and sticky goodness of Biko with these simple steps:
1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight. Drain the rice before cooking.
2. Cook the glutinous rice in a steamer or rice cooker until it becomes tender and fully cooked. Set aside.
3. In a saucepan, combine coconut milk, brown sugar, and pandan leaves (if using). Simmer the mixture over low heat, stirring continuously until the sugar has dissolved and the mixture thickens slightly.
4. Remove the pandan leaves from the coconut milk mixture.
5. Add the cooked glutinous rice to the coconut milk mixture. Stir well to ensure that the rice is evenly coated with the sweet coconut sauce.
6. Continue cooking over low heat, stirring frequently, until the mixture thickens and becomes sticky. This process may take about 20-30 minutes.
7. Preheat your oven to 350°F (175°C). If using a baking dish, line it with banana leaves or parchment paper to prevent sticking. Alternatively, you can use banana leaves to mold individual portions of Biko.
8. Transfer the Biko mixture into the prepared baking dish or banana leaf molds. Smooth the surface with the back of a spoon or spatula.
9. Bake the Biko in the preheated oven for about 15-20 minutes or until the top becomes golden brown.
10. Remove from the oven and let it cool before serving. Drizzle coconut cream over the Biko as a creamy topping.
11. Cut into squares or diamond shapes, and savor the sweet and sticky goodness of Biko.
