A Tropical Delight Bursting with Flavor and Freshness

 Buko Pandan Salad Recipe


Who wants a refreshing and mouth-watering dessert on a hot Summer day?

I made the dish so abrupt the minute I saw some fresh young coconut or “buko” here…it’s “buko pandan” that I enjoy much more than fruit salad, maybe because I also love coconut.
Buko Pandan is a popular Filipino dessert, especially on most parties. This is made using “buko” or young coconut, tapioca pearls and Screwpine leaves (locally known as “Pandan”) added as flavoring to the gelatin or “gulaman”. The fragrant smell of pandan is soothing after a filling meal. However, since there are no pandan leaves or pandan essence available here I’ve used “Mr. Gulaman” a powdered gelatin buko pandan flavor, just lucky I found it here in one of the groceries selling Filipino goods.


Ingredients:


To create your own Buko Pandan masterpiece, you'll need the following ingredients: - Pandan leaves - Water- Gelatin - Young coconut strips (buko) - Condensed milk - Evaporated milk - Fresh coconut meat (buko)


Steps on how to make your own improved Buko Pandan Dessert:


Prepare to Buko Pandan with these simple steps:



1. In a blender, combine pandan leaves and water. Blend until the leaves are finely chopped and the water turns green. Strain the mixture to extract the pandan juice.


2. In a saucepan, prepare the gelatin mixture according to the package instructions, using the pandan juice instead of water. Allow the gelatin to set completely, then cut it into small cubes.


3. In a mixing bowl, combine the pandan gelatin cubes and young coconut strips (buko). Gently toss them together to distribute the ingredients evenly.


4. In a separate bowl, whisk together condensed milk and evaporated milk to create the coconut sauce.


5. Pour the coconut sauce over the pandan gelatin and coconut mixture. Stir gently to coat all the ingredients with the sauce.


6. Optional: Add fresh coconut meat (buko) for an extra burst of flavor and texture.
7. Chill the Buko Pandan dessert in the refrigerator for at least an hour to allow the flavors to meld together and the dessert to become cool and refreshing.


8. Serve the chilled Buko Pandan in individual bowls or glasses, and enjoy!
